Super Cookies!

Calling all of my non chocolate lover friends! 📣 Super Cookies are a perfectly crispy, yet chewy, shortbread-like cookie packed with oats, coconut, and Rice Krispies cereal. Such a yummy cookie to change things up a bit from the regular chocolate chip or peanut butter classics!

Tips and Variations For This Recipe

  • This recipe calls for a little bit of buttermilk mixed with baking soda. This combination takes the acidity of the buttermilk and reacts with the baking soda to create the perfect airy texture of the cookies.
  • Experiment with add-ins! My mom always added walnuts to this recipe. I want to try adding butterscotch chips, I bet it would be delicious! Get creative! 😋

What You Will Need

  • 1 C. granulated sugar
  • 1 C. brown sugar
  • 1 C. vegetable oil
  • 1 C. butter, softened
  • 1 egg
  • 1 tsp. vanilla
  • 1 C. oats
  • 1 C. Rice Krispies Cereal
  • ½ C. shredded coconut
  • 1 Tbsp. buttermilk + 1 tsp. baking soda
  • 1 tsp. cream of tartar
  • 1 tsp. salt
  • 3½ C. all purpose flour

How To Make Super Cookies

  • Preheat oven to 350℉ and lightly grease a cookie sheet. In the bowl of a stand mixer fitted with the paddle attachment, cream together the granulated sugar, brown sugar, oil, and butter. Add in the egg and vanilla.
  • Slowly mix in the oats, Rice Krispies, and shredded coconut. Then, in a separate small bowl or measuring cup, stir together 1 Tablespoon of buttermilk and 1 teaspoon of baking soda. This mixture will be frothy. Add the buttermilk mixture to the bowl and mix until fully combined.
  • Next, add in the cream of tartar, salt, and flour. Mix until fully incorporated. Scoop the cookies in 2-Tablespoon-sized scoops onto the prepared cookie sheet. Gently flatten the cookie dough balls with a fork in a criss-cross pattern. Bake for 11-13 minutes or until the cookies just start to turn golden brown. Let the cookies sit on the cookie sheet for 3-4 minutes, then transfer to a wire cooling rack to cool completely.
  • This recipe makes 4½-5 dozen Super Cookies. Store in an air tight container for up to 5 days at room temperature, or freeze them for later!
