Strawberry Poke Cake!

This Strawberry Poke Cake is a super simple dessert recipe and so fun for Valentine’s Day! It even starts with a box cake mix which makes it even easier! We’ll fill holes in the cake with strawberry jello, then use whipped cream as the frosting! If you prefer chocolate dessert, check out my Chocolate Poke Cake!

Tips and Variations For This Recipe

  • You can make this poke cake with just about any flavor of jello you want! Lemon, orange, and cherry would all be delicious!
  • If you want EXTRA strawberry flavor, you could try to make this recipe with a strawberry cake mix instead of a white cake mix.
  • Since this cake has whipped cream as the frosting, store any leftovers in an airtight container in the fridge.

What You Will Need

  • 1 box of white cake mix + the ingredients to prepare it according to the package
  • 1 C. boiling water
  • 1 3oz. strawberry jello
  • 8oz. container whipped cream
  • strawberries for garnish, optional

How To Make Strawberry Poke Cake

  • Prepare the white cake batter as instructed on the box. Pour into a greased 9″x13″ cake pan and bake at 350℉ for 28-30 minutes. The cake should just be starting to brown on top. Cool the cake for 30 minutes.
  • After cooling for 30 minutes, take the handle of a wooden spoon or a utensil of a similar size and poke holes all over the cake. Stir together 1 C. of boiling water and the package of jello mix until it is fully dissolved. Pour the jello mixture evenly over the entire cake.
  • Refrigerate the cake for 2-3 hours to let the jello set and for it to be completely cool. Once cool, frost with a container of cool whip and garnish with strawberries. Slice and serve!
