HELLO FALL! 🍂🍁 These are THE BEST Pumpkin Muffins! They’re perfectly moist with a beautifully warm pumpkin spice flavor and topped with a cinnamon sugar mixture. 😋 Perfect for a quick simple breakfast or mid-day snack!
Ingredients
- 15 oz. can pumpkin purée
- ⅓ C. vegetable oil
- 2 eggs
- 1¼ C. granulated sugar
- 1½ C. all purpose flour
- 1 tsp. baking powder
- ½ tsp. baking soda
- ½ tsp. salt
- 1 tsp. pumpkin pie spice
- 1 tsp. ground cinnamon
Topping:
- 2 Tbsp. granulated sugar
- 2 tsp. ground cinnamon
Directions
- Preheat oven to 350℉ and put muffin liners into muffin pan. In the bowl of a stand mixer fitted with the paddle attachment, add the pumpkin purée, vegetable oil, eggs, and sugar. Mix until combined. Add in the flour, baking powder, baking soda, salt, pumpkin pie spice, and cinnamon until just incorporated.
- In a small bowl, stir together the cinnamon and sugar for the topping. Scoop ½ C. scoops of the batter into the prepared muffin pan. Sprinkle cinnamon sugar mixture on top of each muffin. Bake for 20-25 minutes or until a toothpick comes out of the center clean.
- Let cool slightly and enjoy warm! This recipe makes 15 muffins.
